Since we are big fans of quick and easy recipes, we decided to create a variety of different flavors for you to try in your keto cupcake.

This keto cake recipe includes a base and 5 flavor options. You can use almond flour or coconut flour for the base. You can be creative with the flavors you choose for your cake, but in this recipe we’ve given you 5 different options:

  • Keto Peanut Butter Mug Cake – Add 1-2 tablespoons of peanut butter.
  • Blueberry pie – add 1/4 cup fresh blueberries.
  • Keto Chocolate Mug Cake – add 1 tablespoon of cocoa powder and a little sweetener.
  • Pumpkin pie – add 1 tablespoon pumpkin puree and 1/4 teaspoon pumpkin pie spice.
  • Keto vanilla mug cake – don’t add anything! The basic recipe already has a vanilla flavor. You can add a little more vanilla extract for a stronger vanilla flavor.

For this recipe we use a vanilla base, which can be with or without nuts. We wanted to offer flavors other than vanilla, so we created these delicious flavors.

The simplest taste is sometimes the best. To make keto vanilla cupcakes, simply follow the recipe and ignore all optional flavorings. The vanilla recipe is delicious with the addition of walnuts or pecans and a pinch of cinnamon for a touch of autumn.

Blueberry

I used to get blueberry muffins at Dunkin’ Donuts. The cupcakes were huge, filled with lots of blueberries, had the perfect texture, sort of a layer cake, and there was even sugar sprinkled on top.

To make a keto blueberry pie, add fresh blueberries to the pie crust before you microwave it. The blueberries will become soft and warm. They give each bite an explosion of flavor.

Professional advice: If you want a richer blueberry flavor and a blue cupcake, you can chop the blueberries and add them to the batter before baking.

Peanut butter

Do you miss your favorite peanut butter and jelly sandwiches from your childhood? Well, we have the perfect solution. Our Keto Peanut Butter Mug Cake uses the addition of peanut butter to flavor the mixture before baking.

To find a ketone-friendly version of peanut butter, just look for brands that use two or fewer ingredients. They all use peanuts, and some add salt to the peanut butter. Avoid cheap brands like JIF and Skippy that add sugar.

Chocolate

This chocolate keto mug cake is probably the most popular flavor option. We make this recipe at least once a week after dinner.

Pumpkin

If you like fall and spicy pumpkin, you’ll love this mug cake. It’s tangy, sweet and very tasty paired with a latte.

Also, contrary to what most people think, pumpkin is not that high in carbs because it contains fiber. Pumpkin is also low in sugar, but has a subtly sweet flavor, so less sweetener is needed for the pie itself.

Most people are disappointed with the flavor they get when they add pumpkin to a pie. The addition of a blend of pumpkin pie spices gives this condiment a distinctive pumpkin pie feel.

The best thing about pumpkin pie is the airy texture you get from the pumpkin.

Cooking with coconut flour

Luckily, we tested this muffin two different ways to find the perfect ratio of coconut flour to almond flour.

We found that you need a little less than half almond flour to get the right ratio with the coconut flour. This means that instead of a quarter cup of almond flour (4 tablespoons), you need 1.5 tablespoons of coconut flour.

The cream helps add extra fat and moisture, which the coconut flour does not, so feel free to add an extra tablespoon if you want the cake to be extra moist.

Dairy-free

Yes, you can, but it won’t be as good. You need to find a substitute for butter and heavy cream.

  • Use coconut oil instead of butter.
  • Use almond milk or water instead of heavy cream.

If using almond milk or water instead of heavy cream, use about half.

Steps to making the best mug cake

We’ve cut quite a bit of cake in our keto days, and we’ve gathered the best tips and tricks to cut the perfect cake every time. We did this base almost 10 times to make sure it was perfect. A gluten-free, ketone-free, sugar-free recipe – it doesn’t get much better than this! Here’s how to become a pro at baking cake in a cup:

Melting oil

The first step is to melt the butter. Melt the butter well in the microwave for 15-20 seconds, this will make it easier to mix the rest of the ingredients.

The oil must not be hot or burning. Just melt it until it’s completely liquid and stop!

Add dry ingredients

This step is important to prevent the egg from boiling in the hot oil! Add all the dry ingredients directly to the melted butter and mix gently. This will create a barrier between the hot oil and the egg you are about to add.

Don’t forget the baking soda! It is very important that your low-carb keto cake is moist and soft.

Add the egg and mix

Now we can add our egg. I like to use a fork to mix everything, because then I don’t have to wash a dirty plate. At this point you should have a relatively homogeneous mixture. If you have a few lumps, it’s no big deal, the microwave will do the trick.

Add flavours of your choice

It doesn’t have to be the last step. If your flavorings are in powder form, it’s best to add them along with the dry ingredients. If you want to add anything else, e.g. blueberries, raspberries, nuts or sugar-free chocolate chips, this is the time to do it.

Microwave for 45-75 seconds

This is by far the most important step in making the perfect mug cake. The time you spend in the microwave determines the moistness and tenderness of your cake.

All microwave ovens are different, so it’s hard to say exactly how long your oven will take. The indicator I use is: when the cake starts to rise above the rim of your coffee cup, it’s done. If you take it out now, you will get a soft, slightly overcooked middle (a bit like a lava cake).

Baking of cupcakes

The cupcakes can be baked in the oven, but do so in a baking dish or casserole. The texture may also be slightly different from a regular cake. Place in a preheated 350 degree oven for 15-20 minutes to bake. Check with a toothpick to see if it is cooked.

Low-carb cake toppings may be individual to your preferences, but that doesn’t mean we don’t have our favorite suggestions!

Our favorite mug cake toppings:

  • Whipped cream – Whipped cream is the best decoration for any cake. Yes, a scoop of keto ice cream is delicious, but once you start, you won’t be able to stop! Instead, make our homemade keto whipped cream!
  • Sugar Free Chocolate Flakes – Sugar free chocolate flakes are another delicious and delicate topping. They go well with all these cuts, and some brands now even offer keto varieties of white chocolate. It goes well with a chocolate keto muffin and peanut butter.
  • Berries – strawberries, blueberries and raspberries – are a great addition to cups because they are both sweet and tart, balancing an already sweet cup.
  • Nut butter might be your favorite, we love peanut butter and almond butter, but sunflower oil is also a great nut-free alternative.

Keto Cake Cooking Instructions:

Making a vanilla pie crust or cupcake

  • Melt the butter in a cup for 30 seconds or until liquid.
  • Then add all the dry ingredients and mix well.
  • Add cream, vanilla and egg and stir again to avoid lumps.
  • Microwave for 45 to 75 seconds or until cup is fully cooked.
  • Allow to cool slightly before installing the trim.
