It’s no secret that I have a bit of a sweet tooth. I’m not saying I’m a huge fan of cookies, cake and other sugary treats though, because I’m not. I’m not saying that I have to avoid sugar in my cooking, or at the dinner table. I’m just saying that I choose to eat healthier most of the time.
If you’re like me and are following a ketogenic diet, you may have heard of the “Nutella Snowball Cookie.” They’re delicious, but getting the ingredients together can be a bit of a challenge. This recipe uses almond flour to create delicious keto dough. It’s low carb, sugar-free, and made with just a few ingredients.
We’ve come the closest to creating an identical copy of the non-keto recipe with these Snowball Cookies with Walnuts. You’ve probably seen them referred to as Russian tea cakes, Italian wedding cookies, or even Mexican wedding cookies, but whatever you name them, they’re a must-try Christmas treat! These elegant keto snowball cookies are inspired by a popular delicacy from across the globe. From Spain and Italy to Mexico and Russia, each nation seems to have its own distinct flavor. It turns out that the variation in nation is due to nut preference (1). We used walnuts, but if you want to make cookies that are really unique to your nation, do some research to figure out whatever nut is native to your region! These cookies will be sugar-free, gluten-free/keto, and delicious regardless of whatever nut you choose.
Keto Snowball Cookies: How to Make Them

The importance of high-quality ingredients cannot be overstated, and if you like cookies, these keto ingredients will blow your mind. A delicious Christmas cookie begins with low-carb and low-sugar components so you don’t get a stomach ache afterwards. The most effective keto ingredients are:
- 1 cup walnuts– Play around with the nuts if you want to have some fun. We’ve tried both pecans and almonds previously, and they’re both delicious. Just make sure they’re cut down to a manageable size.
- 1/2 cup coconut flour (plus 1-2 tbsp at the end)– This is not the same as almond flour (see notes below)
- 1/2 cup melted butter– You may use coconut oil instead of butter if you want to avoid dairy, but it may not have the same taste.
- 1 big egg- For the finest high quality egg, we recommend free range or pasture reared eggs.
- 1/2 cup confectioner’s swerve– The secret to that powdered sugar finish is right here. Swerve is a low-carb/keto sweetener that works well in recipes that don’t call for regular powdered sugar. If you don’t have powdered sweetener on hand, granular sweetener pulsed through a coffee grinder will suffice.
- 1/2 teaspoon vanilla extract– Vanilla extract enhances the cookie’s other warming and nutty tastes. Look for vanilla extract that is either pure or contains alcohol. Anything else may have sugar or corn syrup added to it.
- 50 drops liquid stevia– This is the primary sweetener used in the preparation of the keto snowball biscuits. Coconut sugar is not used since it may raise blood sugar levels and lead you to lose ketosis. The easiest way to make sugar-free snowball cookies is to use a stevia filling.
Coconut Flour or Almond Flour?
We do not use almond flour in this recipe for keto snowball cookies. After a lot of testing, we discovered that coconut flour works best in this keto recipe. Coconut flour, unlike almond flour, is more “powdery,” which aids in the creation of melt-in-your-mouth keto snowball cookies. Unfortunately, coconut flour and almond flour are not interchangeable. These two flours, unlike coconut and almond milk, are not interchangeable. Because almond flour is less absorbent, more flour is needed to create the same keto recipe. You’ll need approximately 3 times as much almond flour to create this recipe. The texture may still alter as a result of this. We typically buy our coconut flour from Amazon if we’re searching for a decent brand.
What is Erythritol from Confections?
Confection erythritol is a powdered sweetener that is often substituted for powdered sugar in baked goods. It’s low-carb and keto-friendly, with no rise in blood sugar. It’s ideal for those with diabetes or those on a ketogenic diet. Most health food shops have it, but if you can’t locate any, you can crush some granular erythritol into a powder in a coffee grinder.
Instructions:
- Preheat the oven to 300 degrees Fahrenheit and prepare a baking sheet with parchment paper.
- In a large mixing bowl, combine the melted butter, egg, stevia, and vanilla extract and put aside. Make sure the butter is melted, but not too hot, or the eggs will be cooked.
- Pulse the walnuts in a food processor until they are finely ground. In a medium mixing bowl, combine the walnut flour, coconut flour, and 1/4 cup swerve. – Combine until everything is thoroughly combined and no large clumps remain. Don’t overprocess the walnuts since you want walnut flour, not butter.
- Add the dry ingredients to the wet mixture in two parts and whisk to incorporate.
- The dough should be soft but stiff enough to roll into balls without sticking to your hands. If the dough is too soft, mix in 1-2 tablespoons more coconut flour.
- Line the parchment paper with 15 equal-sized balls. There’s no need to be concerned since they won’t spread in the oven. Preheat oven to 350°F and bake for 30 minutes.
- Allow the balls to cool for 5 minutes before rolling them in the remaining 1/4 cup swerve powdered sweetener. Place them back on the parchment paper and let aside for another 20-30 minutes to cool completely before eating! – The trick to getting it to stick like powdered sugar is to use powdered sweetness. If you don’t have powdered sweetener, pulse granular sweetener a few times in a coffee grinder.
